I have very fond memories of Christmas as a child. When I was younger, relatives would bring round tins of "Quality Street" and "Roses" by the truck load. For those of you who don't know, these are selection tins filled with cloyingly sweet processed chocolate and candy. Of course, being the age of five or six, I would stuff my naive little face on these sweets until I could no longer stand. But this was not entirely my fault - you see, my favourite chocolate of all time was the notorious "Bounty" bar, which none of my family seemed to like. So, much to my utter delight, I was left with the responsibility of single handedly exterminating all traces of these morish coconut bars.
A lot of time has passed, and I don't think I've eaten a bounty bar in about 5 years. But that doesn't mean I don't miss their sweet and coconutty taste. So, the other day, I whipped up some of my very own "raw bounty bars", made from only wholesome and natural ingredients. I'm sure you'll love them; and each time I take a bite, I'm taken back to cozy days spent beside a log fire, surrounded by family. Enjoy!

FILLING:
- 3 cups of dessicated coconut
- 1 cup of dates
- 2 tablespoons of honey OR agave
- 1/2 a cup melted coconut oil
- 1/2 a cup water
- 1 cup cocoa powder
- 1/2 a cup melted coconut oil
- 1 tablespoon honey OR agave
- a pinch of salt
METHOD:
- First, put all your dessicated coconut in a food processor and blend it into fine pieces. This is very important, as later on you will not be able to mould it into shapes and it will disintegrate.
- One by one, add in the dates, honey, coconut oil and water. blend it all up until you get a thick mixture, similar to dough in texture.
- Now, for the chocolate filling: combine your cocoa powder, coconut oil, honey/agave and salt and mix it until it's a thick and smooth paste.
- Mould your coconut filling mixture in to any shape you want, and roll it around in the chocolate, coating all of it evenly.
- Place them on a tray and refrigerate for about 30-40 minutes to allow the chocolate to set.
- Eat and enjoy!
