There's nothing I love more than accidental miracles. Example: when I raid the cupboard for random ingredients, whack them in the blender and end up with something pretty darn good! Today, I was fortunate enough to have this experience. I was experimenting with a food processor and came up with a gorgeous, gooey, fudgy raw brownie-ish sorta thing! They're moist, light, chocolatey, and actually pretty healthy. They are - of course- gluten, dairy and sugar free, but they also happen to be vegan! So yay for all my vegans out there. So, I thought I'd share it with you (it was really that good!) This recipe makes about 20-30 mini brownies, but it really depends on how big you make them.
INGREDIENTS:

- 4 cups of raisins, sultanas or dates (depends on your preference!)
- 3 tablespoons of honey OR agave (for you vegans out there)
- 1/2 cup of ground almonds
- 3/4 cup of cocoa powder
- a dash of vanilla essence
- a pinch of salt
METHOD
- Put your raisins/sultanas/dates in a food processor and blend them until they are pastey and gooey.
- Add in the ground almonds and cocoa powder and blend until combined.
- Add in the honey/agave, vanilla essence and salt and blend until it forms a sort of lump of gooey dough.
- Grease a small baking tray with coconut oil (or any oil of your choice) and pour in your mixture.
- Spread it until out it's even and pop it in the fridge for about 20 minutes - this is to help the ingredients set so they're easier to cut later on.
- Once you've taken it out the fridge, dust it with cocoa powder and cut them however you'd like. I made little mini brownie bites, but they'd taste just as good in any shape!
