Hello everyone! I hope you've had a lovely Easter, and that you got to spend it with family and friends. I certainly did, and although we are a generally non-religious family and don't do the whole "lets eat so much whimsically shaped chocolate that we can't stand" thing, we do like to sit down to a nice meal.
As usual, there's a very short story behind this recipe that I'd like to share. It began with the purchase of a single "Nakd" bar, and was soon followed by the bulk-buying of many, many more. For those of you who don't know, these bars that I speak of are delicious and actually kind of healthy snacks that are sold in most British supermarkets (you can find out more here). However, they aren't the cheapest snack around and go for around 80p per small bar. So, being a frugal gal, I put my thinking cap on and came up with this recipe - and although the recipe isn't EXACTLY the same as the Nakd bars, I wouuld say it pretty much emulates their flavour and nutritional value. I chose to mould mine into "bite" form (little round balls, that is) instead of bars, but it really doesn't matter. Enjoy!

INGREDIENTS:
METHOD
- 2 cups raisins
- 1/2 cup coconut oil
- 2 tbsp honey
- 1 cup ground almonds
- a pinch of salt
METHOD
- put your raisins in a food processor and blend them until they are a smooth, thick paste.
- Add in the rest of the ingredients one by one.
- Mould them into a shape of your choice. If you are going to make bars, I would recommend greasing a medium-sized baking tray, scooping in the mixture and spreading it out, and then popping it in the fridge for about an hour so it's easier to cut.
- Eat 'em up!
